One Pot Chicken and Succotash

You know what I love about things like succotash? It’s easy, colorful, delicious, and there’s so many things you can add to it. This is a great meal for summer. You don’t have to make it in one pot, it’s also fantastic with grilled chicken. Let’s get cooking!

You Will Need:
Large dutch oven
Frozen corn (let these thaw)
Lima beans
Black beans, drained and rinsed
Tomato, diced
Red bell pepper, diced
Green bell pepper, diced
Jalapeno, seeded and diced
1 lb. boneless skinless chicken breast
Salt and Pepper to taste
Garlic powder
Onion powder
Cayenne pepper
Flour

To start, season your chicken with salt and pepper. On a separate dish, I like to use a paper plate, spread out some flour and season it with salt, pepper, garlic powder, onion powder, and cayenne pepper. Mix all the seasonings into the flour, and then lightly coat your chicken breasts. Over medium-high heat, circle your dutch oven a couple times with extra virgin olive oil. Add your chicken and get both sides nice and brown. The flour will add a little bit of a crispiness to the chicken that will really make this dish special. Once your chicken is brown on both sides add the veggies, some more seasonings to taste, lid it, and let it all cook together until the internal temperature of the chicken is 165 and the veggies are tender.

I know this recipe doesn’t seem like much, but it can be used in so many different ways. That’s the beauty of simple dishes like this. You can pair it with endless combinations of things, and serve it differently every single time you make it.
