Grilled chicken salad


Grilling is one of those things that’s so great because it can make for a really quick meal. I wanted a recipe that works for one of those nights when you just don’t have a lot of time to make dinner, but still want to fire up the grill. So today we’re going to put together an easy, quick, and delicious salad that can stand on its own or pair nicely with anything. Alex and I just got a new grill, so I’m even more excited to get some of these recipes up and keep going with this series! Let’s get cooking!

The only prep that goes along with the recipe is chopping up all the vegetables you want in your salad. I like to use a mix of greens, so I’ll be using spinach, arugula, and romaine lettuce. The vegetables I’ll be using are corn, tomatoes, and carrots. These three will have a natural sweetness that will play nicely off the flavor the grill will give the chicken. Toss all your vegetables in a big bowl and make sure everything is distributed evenly. Set this aside and let’s get started on the chicken.

To season the chicken, we’re keeping it pretty simple. Salt, pepper, and Lowry’s. That’s it. You don’t want the seasoning on the chicken to overpower its own flavor or those of the vegetables. Once your chicken is seasoned to your liking, throw it on your grill and cook it until the internal temperature of the meat is 165, and the chicken has grill marks on either side. Let it cool down a bit, and then either chop or shred it up and throw it in your salad while it’s still just a little warm.

That’s it! You can use whatever dressing you like on this salad. I like something like Newman’s Own southwest dressing because it has just a little heat to it and it goes really well with the chicken breast. I would also shred some smoked Gouda cheese and sprinkle over this salad because it has a wonderful flavor and creamy texture.
